Ingredients

20 jumbo pasta shells

2 cups cooked, shredded rotisserie chicken

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 cup heavy cream

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

Cook the Pasta Shells: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

Prepare the Garlic Butter Sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Stir in the heavy cream, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a simmer, then add the Parmesan cheese. Stir well until the sauce is silky and smooth. Season with salt and black pepper to taste.

Mix the Filling: In a mixing bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, and a pinch of salt and pepper. Mix until well combined.

Stuff the Shells: Carefully take each cooked shell and spoon a generous amount of the chicken and cheese filling into it. Repeat until all the shells are filled.

Assemble the Dish: Pour half of the garlic butter sauce into the bottom of the greased baking dish. Arrange the stuffed shells on top, then pour the remaining sauce over the shells. Sprinkle the remaining mozzarella cheese on top.

Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
