Ingredients
  

2 cups plain Greek yogurt (unsweetened)

1 tablespoon honey or maple syrup (optional, depending on your sweetness preference)

1 teaspoon vanilla extract

1 cup mixed frozen berries (such as strawberries, blueberries, raspberries, and blackberries)

1/4 cup granola (optional, for added crunch)

2 tablespoons unsweetened shredded coconut (optional, for garnish)

Instructions
 

In a mixing bowl, combine the Greek yogurt, honey or maple syrup (if using), and vanilla extract. Stir until well blended and the mixture is smooth.

    Line a baking sheet with parchment paper, making sure it hangs over the edges for easy removal later.

      Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it evenly into a rectangle or square about 1/4 inch thick.

        Scatter the mixed frozen berries evenly over the yogurt layer, pressing them in slightly so they stick.

          If using, sprinkle granola and shredded coconut on top of the berries.

            Place the baking sheet in the freezer and let it freeze for at least 4 hours or until completely solid.

              Once frozen, remove the yogurt bark from the baking sheet by lifting the parchment paper.

                Break or cut the bark into pieces of your desired size.

                  Store any leftovers in an airtight container in the freezer for up to 2 weeks.
