Ingredients

1 jar (16 oz) dill pickle spears

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional)

Salt and pepper to taste

Vegetable oil (for frying)

Ranch dressing (for serving)

Instructions

Drain and Dry: Begin by draining the pickle spears from the jar and patting them dry with paper towels to remove excess moisture. This will help the coating stick better.

Set Up Dipping Stations: In a medium bowl, pour the buttermilk. In another bowl, combine the flour, cornmeal, garlic powder, onion powder, smoked paprika, cayenne (if using), salt, and pepper. Mix well.

Coat the Pickles: Dip each pickle spear into the buttermilk, allowing any excess to drip off, then roll it in the flour mixture, ensuring it's evenly coated. Place the coated pickles on a plate or baking sheet while you prepare the oil for frying.

Heat the Oil: In a deep skillet or frying pan, pour enough vegetable oil to cover the bottom by about 1 inch. Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil with a small pinch of the flour mixture; if it sizzles, it's ready.

Fry the Pickles: Carefully add a few pickle spears to the hot oil, making sure not to overcrowd the pan. Fry them until they are golden brown and crispy, about 3-4 minutes, flipping halfway through for even cooking.

Drain the Fried Pickles: Using a slotted spoon, remove the fried pickles and place them on a plate lined with paper towels to drain excess oil. Sprinkle with additional salt while they're still hot.

Serve and Enjoy: Serve the crispy fried pickles warm with a side of ranch dressing for dipping. Enjoy your delightful snack!
