1 cup cornmeal

1 cup buttermilk

1/2 cup all-purpose flour

2 large eggs

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup sweet corn kernels (fresh, frozen, or canned)

1/2 cup chopped green onions

Vegetable oil (for frying)

Instructions
 

In a large bowl, combine cornmeal and buttermilk. Let it sit for about 10 minutes to allow the cornmeal to absorb the buttermilk.

    In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

      Add the eggs to the cornmeal mixture and whisk until well combined. Then gradually add the dry ingredients to the wet ingredients, stirring until just combined.

        Gently fold in the sweet corn kernels and chopped green onions until evenly distributed.

          Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering.

            Using a spoon or small ice cream scoop, drop tablespoon-sized portions of the batter into the hot oil, careful not to overcrowd the pan.

              Fry the fritters for 2-3 minutes on each side or until they are golden brown and crispy.

                Remove the fritters from the oil and place them on a paper towel-lined plate to drain the excess oil.
