1 medium head of green cabbage, chopped

4 strips of thick-cut bacon, diced

1 large onion, thinly sliced

4 cloves of garlic, minced

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (optional, for heat)

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Cook the Bacon: In a large skillet over medium heat, add the diced bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, leaving the rendered fat in the skillet.

    Sauté the Onion: In the same skillet with the bacon fat, add the sliced onion. Sauté for about 5 minutes, or until the onions are soft and translucent.

      Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.

        Add Cabbage: Gradually add the chopped cabbage to the skillet, tossing it with the onions and garlic. If the skillet is overcrowded, you can add the cabbage in batches.

          Season: Sprinkle in the smoked paprika, red pepper flakes (if using), salt, and black pepper. Drizzle the olive oil over the cabbage and continue to sauté, stirring occasionally. Cook for about 10-15 minutes, or until the cabbage is wilted and tender but still has some crunch.

            Finish with Vinegar: Once the cabbage is cooked to your liking, stir in the apple cider vinegar and cooked bacon. Cook for an additional 2 minutes to heat everything through.
