Freshly Baked Mozzarella Biscuit Bombs

Ingredients
  

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup milk

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder (optional)

2 tablespoons fresh parsley, chopped (for garnish)

Marinara sauce (for dipping)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until it resembles coarse crumbs.

        Pour in the milk and mix until just combined. Do not overmix; the dough should be slightly sticky.

          Fold in the shredded mozzarella, grated Parmesan, and garlic powder if using, until evenly distributed throughout the dough.

            Using a spoon or your hands, scoop out a small portion of dough (about 2 tablespoons) and wrap it around a piece of mozzarella cheese, sealing it securely. Repeat with the remaining dough and cheese.

              Arrange the cheese-filled dough balls on the prepared baking sheet, leaving some space between each one for expansion while baking.

                Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown and the cheese is bubbling inside.

                  Remove from the oven and let cool slightly before transferring to a serving platter. Garnish with fresh parsley.

                    Serve warm with marinara sauce on the side for dipping.
