Ingredients
  

2 cups cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1 small red onion, thinly sliced

1 cup Kalamata olives, pitted

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1 teaspoon dried oregano

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, and red onion.

    Add the Kalamata olives and crumbled feta cheese to the bowl.

      Sprinkle the chopped fresh parsley and dried oregano over the vegetable mixture.

        In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, salt, and pepper to create the dressing.

          Pour the dressing over the salad and toss gently to combine all the ingredients thoroughly.

            Taste and adjust seasoning if necessary, then let the salad sit for about 10 minutes to allow the flavors to meld before serving.
