1 cup long-grain rice (such as basmati or jasmine)

2 tablespoons unsalted butter

2 medium yellow onions, thinly sliced

3 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon sugar

2 cups vegetable or beef broth

1/2 cup grated Gruyère cheese (or Swiss cheese)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add the thinly sliced onions, and stir to coat them in the butter. Sauté the onions for about 10-12 minutes, stirring occasionally, until they become golden brown and caramelized.

    Add minced garlic, dried thyme, and sugar to the onions, stirring for about 2 more minutes until fragrant.

      Stir in the rice, coating it with the onion mixture. Let the rice toast for about 2-3 minutes, stirring constantly.

        Pour in the broth, and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and has absorbed all the liquid.

          Once the rice is cooked, turn off the heat and stir in the grated Gruyère cheese until melted and creamy. Allow it to sit for a few minutes, covered.

            Fluff the rice with a fork, taste, and adjust the seasoning if necessary. Serve warm, garnished with fresh parsley.
