1 cup long-grain white rice

2 large yellow onions, thinly sliced

4 tablespoons unsalted butter

2 cups vegetable broth (low sodium)

1 teaspoon garlic powder

1 teaspoon dried thyme

1 teaspoon sugar

½ teaspoon salt (adjust to taste)

½ teaspoon black pepper

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Onions: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions, sugar, and a pinch of salt. Sauté the onions for about 15-20 minutes, stirring frequently, until they are caramelized and golden brown. If they begin to stick, add a splash of water or broth to help loosen them.

    Toast the Rice: In another saucepan, melt the remaining 2 tablespoons of butter over medium heat. Add the uncooked rice and sauté for about 2-3 minutes until slightly golden, stirring continuously.

      Combine Ingredients: Add the caramelized onions to the rice, then pour in the vegetable broth. Stir in the garlic powder, dried thyme, salt, and black pepper.

        Cook the Rice: Bring the mixture to a boil. Once boiling, reduce the heat to low and cover the saucepan with a lid. Simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.

          Finish and Serve: Remove from heat and let the rice sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the grated Parmesan cheese. Adjust seasoning if necessary.
