1 pound beef sirloin, thinly sliced

2 large onions, thinly sliced

3 cloves garlic, minced

2 cups beef broth

1 cup white wine (optional, replace with more broth if desired)

2 tablespoons olive oil

2 tablespoons butter

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 tablespoon Worcestershire sauce

8 ounces egg noodles

1 cup grated Gruyère cheese (or Swiss cheese)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté Onions: In a large skillet over medium heat, add 2 tablespoons of olive oil and 2 tablespoons of butter. Once melted and hot, add the sliced onions. Cook for about 15-20 minutes, stirring occasionally, until the onions become golden brown and caramelized. Add the minced garlic and thyme, cooking for an additional 2 minutes until fragrant.

      Prepare the Beef: Push the onions to the side of the skillet and add the sliced beef sirloin. Season with salt and pepper. Cook for about 3-5 minutes until the beef is browned, stirring occasionally to mix with the onions.

        Deglaze & Simmer: Pour in the white wine (if using) and scrape up any browned bits from the bottom of the skillet. Add the beef broth and Worcestershire sauce, stirring to combine. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld.

          Combine with Noodles: Add the cooked egg noodles to the skillet and stir to coat them in the flavorful sauce. If the mixture seems too thick, add a bit more beef broth to your desired consistency.

            Cheesy Finish: Preheat your broiler. Transfer the noodle mixture to an oven-safe dish and sprinkle the grated Gruyère cheese evenly on top. Broil for 2-3 minutes, or until the cheese is bubbly and golden brown.

              Serve: Once out of the oven, allow it to cool for a minute. Garnish with chopped fresh parsley and serve hot.
