For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup cold unsalted butter, cubed

3/4 cup buttermilk

For the Beef:

1 lb thinly sliced roast beef (deli-style)

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

For the Au Jus Dipping Sauce:

2 cups beef broth

1 tablespoon soy sauce

1 teaspoon fresh thyme, chopped

1 clove garlic, minced

Salt and pepper to taste

Instructions
 

Make the Biscuits:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

          - Stir in the buttermilk until just combined. Do not overmix.

            - Turn the dough onto a floured surface and pat it down to about 1-inch thickness.

              - Cut out biscuits using a round cutter and place them on a parchment-lined baking sheet.

                - Bake for 12-15 minutes or until golden brown.

                  Prepare the Beef:

                    - In a medium saucepan, combine 2 cups of beef broth, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Bring to a simmer over medium heat.

                      - Add the sliced roast beef and cook for about 2-3 minutes, just until warm. Remove from heat.

                        Make the Au Jus Dipping Sauce:

                          - In a separate small saucepan, combine the 2 cups of beef broth, soy sauce, thyme, garlic, salt, and pepper. Bring to a gentle simmer and allow to cook for about 5 minutes to combine the flavors.

                            Assemble and Serve:

                              - Split the baked biscuits in half. Place a generous portion of the warm sliced roast beef on the bottom half of each biscuit.

                                - Optional: Drizzle some of the warm beef broth mixture over the beef before topping with the biscuit lid.

                                  - Serve immediately with small bowls of au jus for dipping.
