1 cup ricotta cheese

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

1/2 cup milk

1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

1 tablespoon sugar (optional)

Butter or oil for cooking

Fresh lemon juice and powdered sugar for serving (optional)

Instructions
 

Mix Wet Ingredients: In a large bowl, combine the ricotta cheese, eggs, milk, vanilla extract, and lemon zest. Whisk until well blended and creamy.

    Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and sugar (if using).

      Blend Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

        Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Add a little butter or oil to coat the surface.
