6 large eggs

1 cup cottage cheese (preferably low-fat)

1/2 cup diced bell peppers (any color)

1/2 cup chopped spinach (fresh or frozen, thawed)

1/4 cup green onions, sliced

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

1 cup shredded cheese (cheddar, mozzarella, or your choice)

Optional: herbs (such as parsley or basil) for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or use silicone muffin cups for easy removal.

    In a large mixing bowl, whisk together the eggs until they are well beaten.

      Stir in the cottage cheese until fully combined. The mixture should be somewhat lumpy due to the cottage cheese.

        Add the diced bell peppers, chopped spinach, green onions, garlic powder, onion powder, salt, and black pepper. Mix until everything is evenly coated.

          Fold in the shredded cheese, ensuring it is distributed throughout the mixture.

            Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full. This will allow room for them to rise without overflowing.

              Bake in the preheated oven for 20-25 minutes or until the muffins are set and the tops are lightly golden.

                Allow the muffins to cool in the tin for about 5 minutes before gently removing them. If using a regular muffin tin, run a knife around the edges for easy release.
