1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, cold

1 tablespoon honey (optional for a touch of sweetness)

Preheat the Oven: Start by preheating your oven to 450°F (232°C).

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined.

      Cut in the Butter: Add the cold, cubed butter into the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs with pea-sized pieces remaining.

        Mix in Buttermilk: Create a well in the center of the flour mixture and pour in the cold buttermilk and honey (if using). Gently stir with a wooden spoon or spatula until just combined. Be careful not to overmix; the dough should be slightly shaggy.

          Form the Dough: Turn the dough out onto a floured surface. Gently knead the dough 4-5 times until it comes together. Pat the dough into a rectangle about 1-inch thick.

            Cut Biscuits: Use a floured round cutter (or a glass) to cut out your biscuits. Do not twist the cutter as you press down; this helps them rise better. Gather any scraps, gently knead, and cut out more biscuits until all dough is used.
