Ingredients
  

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (can substitute with almond or soy milk)

1 large egg

2 tablespoons melted butter (plus more for the pan)

1 teaspoon vanilla extract

Optional toppings: maple syrup, fresh fruits, whipped cream, chocolate chips

Instructions
 

In a medium mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In a separate bowl, beat the egg, then add the milk, melted butter, and vanilla extract. Mix until fully combined.

      Pour the wet ingredients into the dry ingredients and stir gently just until combined. It’s okay if there are a few lumps; do not overmix!

        Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.

          Use a 1/4 cup measuring cup to pour batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 1-2 minutes.

            Flip the pancakes and cook for another 1-2 minutes or until golden brown and cooked through.

              Serve immediately with your choice of toppings such as maple syrup, fresh fruits, or whipped cream.
