1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

2 cups mixed bell peppers (red, green, yellow), sliced

1 cup broccoli florets

1 cup snap peas

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

½ cup low-sodium soy sauce

¼ cup honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds for garnish

Chopped green onions for garnish

Cooked rice or noodles for serving

Instructions
 

Marinate Chicken: In a medium bowl, combine the chicken pieces with 2 tablespoons of soy sauce and marinate for about 15 minutes while you prepare the vegetables.

    Prepare Sauce: In a small bowl, whisk together the remaining soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Set aside.

      Cook Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken pieces and stir-fry until golden and cooked through, around 5-7 minutes. Remove the chicken from the pan and set it aside.

        Stir-Fry Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Stir in the mixed bell peppers, broccoli, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are vibrant and slightly tender.

          Combine Ingredients: Return the cooked chicken to the pan with the vegetables. Pour the prepared teriyaki sauce over the mixture and stir well to coat everything evenly.

            Thicken Sauce: Add the cornstarch slurry (cornstarch mixed with water) to the stir-fry, stirring constantly until the sauce thickens and becomes glossy, about 1-2 minutes.

              Serve: Remove from heat and serve the teriyaki chicken stir-fry over cooked rice or noodles. Garnish with sesame seeds and chopped green onions.
