Ingredients
  

1 cup orzo pasta

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 garlic clove, minced

Salt and pepper to taste

Instructions
 

Cook the Orzo: In a large pot, bring water to a boil. Add a pinch of salt and stir in the orzo pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to cool.

    Prepare Veggies: While the orzo is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and minced garlic. Season with salt and pepper to taste.

        Combine Ingredients: In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and basil. Pour the dressing over the salad and toss gently until all ingredients are coated.

          Chill and Serve: Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together. Serve cold or at room temperature, garnished with additional herbs if desired.
