Ingredients

1 cup long-grain white rice

2 cups water or chicken broth

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 medium bell pepper (any color), diced

1-2 jalapeños, seeded and minced (optional, for heat)

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 large tomato, diced

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Rinse the Rice: Start by rinsing the long-grain rice under cold water until the water runs clear. This helps remove excess starch and prevents it from becoming sticky.

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

Add Veggies and Spices: Stir in the diced bell pepper and jalapeños (if using). Cook for an additional 3-4 minutes until the peppers soften. Then, add smoked paprika, cumin, and chili powder. Stir well to combine.

Toast the Rice: Add the rinsed rice to the pot and toast it lightly in the oil and spices for about 2 minutes, stirring frequently.

Simmer the Rice: Pour in the water or chicken broth, bring the mixture to a boil. Once it starts boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the liquid is absorbed and the rice is tender.

Add Beans and Corn: Once the rice is cooked, stir in the black beans, corn, and diced tomatoes. Season with salt and pepper to taste. Let it heat through for about 5 minutes, allowing the flavors to meld.

Finish and Serve: Fluff the rice with a fork, garnish with fresh cilantro, and serve with lime wedges on the side for an extra burst of flavor.
