Ingredients
  

8 lamb chops, about 1-inch thick

1/4 cup olive oil

2 tablespoons fresh lemon juice

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh oregano, finely chopped

1 teaspoon salt

1/2 teaspoon black pepper

Zest of 1 lemon

1/4 cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a mixing bowl, combine the olive oil, lemon juice, minced garlic, chopped rosemary, chopped oregano, salt, black pepper, and lemon zest. Whisk until well combined.

    Place the lamb chops in a large resealable plastic bag or shallow dish and pour the marinade over the chops. Ensure they are well coated. Seal the bag or cover the dish with plastic wrap.

      Refrigerate the lamb chops marinating for at least 2 hours, or up to overnight for maximum flavor.

        Preheat your grill or grill pan over medium-high heat. Ensure it’s hot before placing the lamb chops on it.

          Remove the lamb chops from the marinade and let any excess marinade drip off. (Discard the used marinade.)

            Place the lamb chops on the grill and cook for about 4-5 minutes per side for medium-rare, or until they reach your desired doneness. Use a meat thermometer for accuracy (about 145°F for medium-rare).

              Once cooked, remove the lamb chops from the grill and let them rest for about 5 minutes to retain their juices.

                Serve the lamb chops garnished with fresh parsley and accompanied by lemon wedges on the side.
