2 pounds beef chuck roast, cut into 1-inch cubes

1 cup low-sodium soy sauce

1/2 cup brown sugar

1/4 cup rice vinegar

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon crushed red pepper flakes (optional)

1 cup beef broth

1 cup carrots, sliced

1 cup bell peppers, sliced (any color)

2 cups broccoli florets

4 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

In a large bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes (if using). Whisk until the sugar is dissolved.

    Place the cubed beef chuck roast in the slow cooker and pour the sauce mixture over the top. Stir to combine.

      Add the beef broth, sliced carrots, and bell peppers to the slow cooker, mixing gently to combine all the ingredients.

        Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the beef is tender and easily shreds with a fork.

          About 30 minutes before serving, add the broccoli florets to the slow cooker, gently stirring them into the beef mixture, and cover again to let them steam.

            Once cooked, serve the teriyaki beef over cooked jasmine rice. Garnish each bowl with chopped green onions and a sprinkle of sesame seeds.
