Ingredients

1 sheet of puff pastry (thawed)

1 cup fresh spinach, chopped

1 cup grated Parmesan cheese

1/2 cup ricotta cheese

1 garlic clove, minced

1 large egg (for egg wash)

1/2 teaspoon black pepper

1/4 teaspoon salt

1 teaspoon olive oil (for sautéing)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Spinach Filling: In a skillet over medium heat, add the olive oil. Once hot, sauté the minced garlic for about 30 seconds until fragrant, then add the chopped spinach. Cook until wilted (about 2-3 minutes). Remove from heat and let it cool slightly.

Mix the Cheese Filling: In a bowl, combine the cooked spinach mixture with the ricotta cheese, Parmesan cheese, black pepper, and salt. Mix until well combined.

Roll Out the Pastry: On a floured surface, roll out the puff pastry sheet to smooth out creases. Cut the pastry into long strips, approximately 2 inches wide.

Assemble the Twists: Take a strip of pastry and place a tablespoon of the cheese filling along the center. Fold the pastry over to enclose the filling, pressing the edges to seal. Twist the entire strip gently to create a spiral shape.

Prepare the Egg Wash: In a small bowl, beat the egg. Brush the tops of the twisted pastries with the egg wash to give them a golden finish while baking.

Bake the Twists: Place the twisted pastries on the prepared baking sheet, spaced apart. Bake in the preheated oven for 15-20 minutes or until they are puffed and golden brown.

Serve: Remove from the oven and let cool slightly before serving. Enjoy these flaky and cheesy twists warm, perhaps with a side of marinara sauce for dipping!
