1 lb (450g) white fish fillets (cod, haddock, or tilapia), cut into bite-sized pieces

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, peeled and diced

2 cups (480ml) fish or vegetable broth

1 cup (240ml) heavy cream

1 cup (150g) corn kernels (fresh or frozen)

1 teaspoon dried thyme

½ teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil or unsalted butter

¼ cup (15g) fresh parsley, chopped (for garnish)

Optional: Crusty bread for serving

Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

    Add Potatoes: Stir in the diced potatoes and cook for another 3-4 minutes, allowing them to slightly soften.

      Pour in Broth: Add the broth, dried thyme, smoked paprika, and season with salt and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.

        Incorporate Fish and Corn: Gently fold in the fish pieces and corn. Simmer for an additional 5-7 minutes, or until the fish is cooked through and tender.

          Add Cream: Slowly pour in the heavy cream, stirring to combine. Allow the chowder to heat through without boiling, for about 2-3 minutes. Adjust the seasoning with more salt and pepper if needed.

            Garnish and Serve: Remove the chowder from heat and sprinkle with fresh parsley. Serve hot with crusty bread on the side for dipping!
