1 lb (450g) white fish fillets (cod, haddock, or tilapia), cut into bite-sized pieces

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, peeled and diced

2 cups (480ml) fish or vegetable broth

1 cup (240ml) heavy cream

1 cup (150g) corn kernels (fresh or frozen)

1 teaspoon dried thyme

½ teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil or unsalted butter

¼ cup (15g) fresh parsley, chopped (for garnish)

Optional: Crusty bread for serving

Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.
