2 lbs chicken (preferably bone-in pieces like thighs or drumsticks)

1 cup soy sauce

1 cup white vinegar

1/2 cup water

1 head garlic, minced

1 large onion, sliced

2-3 bay leaves

1 tablespoon black peppercorns

2 tablespoons brown sugar (optional for a hint of sweetness)

2-3 tablespoons cooking oil

Salt and pepper to taste

1-2 red chili peppers (optional for heat)

Chopped green onions for garnish

Marinate the Chicken: In a large bowl, combine the soy sauce, vinegar, minced garlic, black peppercorns, and bay leaves. Add the chicken pieces, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes (or overnight for deeper flavor).

    Sear the Chicken: In a large skillet or Dutch oven, heat the cooking oil over medium heat. Remove the chicken from the marinade (keeping the marinade for later use) and sear the pieces in batches until browned on all sides. This enhances the flavor. Remove the chicken and set aside.

      Sauté Aromatics: In the same skillet, add sliced onions and sauté until translucent, about 3-4 minutes. If using, add the red chili peppers for a spicy kick.

        Combine Ingredients: Return the chicken to the skillet. Pour in the reserved marinade along with 1/2 cup of water. Adjust the heat to medium-high and bring the mixture to a gentle boil.

          Simmer: Reduce the heat to low, cover the skillet, and let simmer for 30-40 minutes, allowing the chicken to cook through and absorb the flavors. Stir occasionally to prevent sticking. If you prefer a thicker sauce, you can simmer uncovered during the last 10-15 minutes.

            Taste and Adjust Seasoning: Stir in the brown sugar, if desired, to balance the acidity. Taste and adjust the seasoning with salt and pepper as necessary.

              Serve: Once the chicken is cooked and the sauce has thickened to your liking, remove from heat. Serve hot over steamed rice, garnished with chopped green onions.
