Ingredients

1 lb large shrimp, peeled and deveined

8 oz linguine or spaghetti

4 tbsp unsalted butter

2 tbsp olive oil

4 cloves garlic, minced

1/4 tsp red pepper flakes (adjust for spice preference)

1/2 cup white wine (preferably Sauvignon Blanc)

1 lemon, juiced (about 2 tbsp)

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions

Begin by cooking the linguine or spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

In a large skillet over medium heat, melt the butter with the olive oil. Once the butter is fully melted and bubbly, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic becomes fragrant and lightly golden.

Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper, and cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque.

Pour in the white wine and lemon juice, bringing the mixture to a gentle simmer. Cook for an additional 2 minutes, allowing the flavors to meld.

Add the drained pasta to the skillet, tossing gently to combine. If the dish seems dry, add a splash of the reserved pasta water until you reach your desired consistency.

Remove from heat and stir in the chopped parsley for freshness. Adjust seasoning with additional salt and pepper if needed.

Serve your delightful shrimp scampi immediately, garnished with extra parsley and grated Parmesan cheese, if desired.
