For the Choux Pastry:

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

4 large eggs

1 teaspoon vanilla extract (optional)

For the Cream Filling:

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

For the Chocolate Ganache (optional):

1/2 cup dark chocolate chips

1/4 cup heavy cream

Instructions
 

Make the Choux Pastry:

    - In a medium saucepan, combine water and butter. Heat over medium until the butter is melted and the mixture boils.

      - Remove from heat, and quickly stir in the flour and salt until the mixture forms a ball and pulls away from the sides of the pan.

        - Let the dough cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Stir in the vanilla extract if using.

          Pipe the Puffs:

            - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

              - Using a piping bag with a large round tip, pipe small mounds (about 1.5 inches in diameter) onto the prepared baking sheet, leaving space between them.

                - Bake for 25-30 minutes until they are golden brown and puffed up. Do not open the oven door during the first 20 minutes of baking.

                  Cool the Puffs:

                    - Once baked, remove the puffs from the oven and let them cool completely on a wire rack.

                      Prepare the Cream Filling:

                        - In a mixing bowl, whip together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

                          - Transfer the whipped cream to a piping bag fitted with a small round tip.

                            Fill the Puffs:

                              - Once the cream puffs have cooled, poke a small hole in the bottom of each puff using a skewer.

                                - Pipe the whipped cream filling into each puff until they feel full.

                                  Make the Chocolate Ganache (optional):

                                    - In a small saucepan, heat the heavy cream just until boiling. Remove from heat and stir in the dark chocolate chips until smooth and glossy.

                                      - Drizzle or dip the filled cream puffs in the ganache as desired.
