Ingredients
  

1 cup of fresh raspberries (or frozen, thawed)

1 cup of almond flour

½ cup of coconut oil, melted

¼ cup of honey (or maple syrup for a vegan option)

1 teaspoon of vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper for easy removal.

    In a mixing bowl, combine the almond flour and melted coconut oil until well mixed and resembles a crumbly texture.

      Add the honey (or maple syrup) and vanilla extract to the mixture, stirring until fully incorporated. Reserve about ¼ of the mixture for the topping.

        Press the remaining mixture evenly into the bottom of the prepared baking dish to form a crust.

          Spread the fresh (or thawed) raspberries evenly over the crust. Take the reserved crumb mixture, crumble it on top of the raspberries.

            Bake in the preheated oven for 20-25 minutes until the top is lightly golden and the raspberries are bubbling.

              Allow to cool completely in the pan before lifting out to cut into squares.
