Ingredients

2 ½ cups all-purpose flour

2 ½ teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 tablespoon lemon zest

1 cup fresh lemon juice (about 4-5 lemons)

1 cup sour cream

1 teaspoon vanilla extract

1 cup powdered sugar (for glaze)

2 tablespoons lemon juice (for glaze)

Optional: Thin lemon slices and fresh mint for garnish

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan thoroughly to prevent sticking.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 4-5 minutes.

Add Eggs: Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as necessary.

Incorporate Lemon: Mix in the lemon zest and lemon juice, then add the sour cream and vanilla extract. Beat until smooth and well combined.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined. Be careful not to overmix.

Pour into Bundt Pan: Pour the batter into the prepared Bundt pan, smoothing the top with a spatula.

Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cake to cool in the pan for about 10-15 minutes. Then, carefully invert onto a wire rack to cool completely.

Prepare Glaze: In a small bowl, mix together the powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.

Garnish: Optionally, add thin lemon slices and fresh mint leaves on top for decoration.

Serve: Slice and enjoy your Extreme Lemon Bundt Cake, bursting with refreshing lemon flavor!
