1 lb elbow macaroni

2 cups cooked lobster meat, chopped

4 tablespoons unsalted butter

1 small onion, finely chopped

3 cloves garlic, minced

1/4 cup all-purpose flour

4 cups whole milk

1 cup heavy cream

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 cup grated Parmesan cheese

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup panko breadcrumbs

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the elbow macaroni until al dente, according to package instructions. Drain and set aside.

    Prepare the Sauce: In the same pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

      Make the Roux: Sprinkle the flour over the onion and garlic mixture, stirring constantly for about 2 minutes to cook off the raw flour taste.

        Add Liquids: Gradually whisk in the whole milk and heavy cream, making sure there are no lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.

          Incorporate Cheeses: Reduce heat to low and add the shredded cheddar, Gruyère, and Parmesan cheeses. Stir until melted and smooth. Add the Dijon mustard, smoked paprika, salt, and pepper. Fold in the lobster meat gently, ensuring it's evenly distributed.
