Easy Weeknight Creamy Tuscan Ravioli

1 package (9 oz) fresh or frozen cheese ravioli

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach, roughly chopped

1 teaspoon dried Italian seasoning (or a mix of oregano, basil, and thyme)

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, for garnish

Instructions
 

Cook the Ravioli: Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set the ravioli aside.

    Sauté the Garlic and Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.

      Add the Spinach: Stir in the chopped spinach and Italian seasoning. Cook for another 2-3 minutes until the spinach wilts.

        Make the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine. Add the Parmesan cheese, stirring until melted and well incorporated. Season with salt and pepper to taste.

          Combine Ravioli and Sauce: Gently toss the cooked ravioli into the creamy tomato spinach sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
