1 lb (450g) beef stew meat, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, sliced

2 medium potatoes, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes, with juices

4 cups beef broth

2 teaspoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried basil

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Sear for about 5-7 minutes, turning occasionally, until browned on all sides. Remove the beef and set aside.

    Sauté the Aromatics: In the same pot, add chopped onion and sauté for about 3-4 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

      Add Vegetables: Stir in the carrots, celery, and potatoes. Cook for another 5 minutes, stirring occasionally, until the vegetables start to soften.

        Combine Ingredients: Add the seared beef back into the pot along with green beans, diced tomatoes (with juices), beef broth, Worcestershire sauce, thyme, basil, and bay leaf. Stir to combine all ingredients.
