Easy Taco Soup

Ingredients
  

1 lb ground beef (or ground turkey for a leaner option)

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes (with green chilies if preferred)

1 packet taco seasoning mix

4 cups beef (or vegetable) broth

1 cup water

1 cup bell peppers, diced (any color)

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, diced avocado, sliced jalapeños, tortilla chips

Instructions
 

In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked, breaking it apart as it cooks, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion and minced garlic to the pot, cooking until the onion is translucent (about 3-4 minutes).

      Stir in the diced bell peppers and cook for another 2-3 minutes until they begin to soften.

        Mix in the black beans, corn, diced tomatoes (with their juices), taco seasoning, broth, and water. Stir well to combine.

          Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20-25 minutes to allow the flavors to meld.

            Season with salt and pepper to taste. If a thicker consistency is desired, simmer uncovered for an additional 5-10 minutes.

              Serve hot, allowing each person to add their favorite toppings like shredded cheese, sour cream, diced avocado, sliced jalapeños, and crispy tortilla chips.
