Easy Stuffed Pepper Casserole

Ingredients
  

1 pound ground turkey or beef

1 cup uncooked rice (white or brown)

2 cups vegetable broth or water

4 large bell peppers (any color), diced

1 can (15 oz) diced tomatoes, undrained

1 onion, chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded cheese (cheddar, mozzarella, or a mix)

Fresh parsley or basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Rice: In a medium saucepan, combine rice and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.

      Prepare the Filling: In a large skillet over medium heat, add the ground turkey (or beef). Cook until browned. Add the chopped onion and minced garlic, cooking until the onion is translucent.

        Mix in Vegetables: Stir in the diced bell peppers, canned tomatoes, cooked rice, Italian seasoning, smoked paprika, salt, and pepper. Cook for an additional 5 minutes until everything is well combined and heated through.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

            Top with Cheese: Sprinkle the shredded cheese over the top of the casserole.

              Bake: Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove foil and bake for an additional 10 minutes or until cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh parsley or basil if desired. Serve hot and enjoy!
