EASY STUFFED BELL PEPPERS

Ingredients
  

4 medium bell peppers (any color)

1 cup cooked quinoa (or rice)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Olive oil for drizzling

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Carefully cut the tops off of the bell peppers and remove the seeds and membranes. Set the tops aside, as you can chop them up for the filling if you'd like.

      Mix the Filling: In a large mixing bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, half of the cheese, cumin, chili powder, garlic powder, onion powder, and a pinch of salt and pepper. Mix until fully combined.

        Stuff the Peppers: Lightly oil a baking dish. Spoon the quinoa mixture into each bell pepper until they are generously filled. Place the stuffed peppers upright in the baking dish.

          Top with Cheese: Sprinkle the remaining cheese on top of each stuffed pepper for an extra cheesy finish.

            Bake Your Peppers: Drizzle a little olive oil over the peppers and cover the dish with aluminum foil. Bake in the preheated oven for 25-30 minutes. After that, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and the peppers are tender.

              Garnish and Serve: Once baked, remove them from the oven. Let cool for a few minutes, then garnish with fresh cilantro or parsley. Serve hot and enjoy your colorful, nutritious stuffed bell peppers!
