EASY STUFFED BELL PEPPERS

Ingredients
  

4 large bell peppers (any color)

1 cup cooked rice (white or brown)

1 pound ground turkey or beef

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly so they stand upright.

      Cook the Filling: In a large skillet over medium heat, brown the ground turkey or beef until fully cooked. Drain any excess fat.

        Mix Ingredients: In the same skillet, stir in the cooked rice, black beans, corn, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Let the mixture simmer for about 5 minutes to blend the flavors.

          Stuff the Peppers: Fill each bell pepper with the meat and rice mixture, packing it lightly. Place the stuffed peppers in a baking dish.

            Top with Cheese: Sprinkle shredded cheese on top of each stuffed bell pepper.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven, let cool slightly, and garnish with fresh cilantro or parsley if desired. Serve warm and enjoy!
