Ingredients

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon chili powder

Salt and pepper to taste

8 small corn tortillas

1 cup shredded cabbage (green or purple)

½ cup diced tomatoes

¼ cup finely chopped red onion

¼ cup fresh cilantro, chopped

1 avocado, sliced

1 lime, cut into wedges

Optional: hot sauce, sour cream, or a creamy avocado dressing

Instructions

Prepare the Shrimp: In a mixing bowl, combine the shrimp, olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper. Toss until the shrimp are evenly coated in the seasoning mixture.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the shrimp to the skillet in a single layer. Cook for approximately 2-3 minutes on one side until they turn pink, then flip and cook for an additional 2-3 minutes until fully cooked through. Remove from heat.

Warm the Tortillas: In the same skillet, lightly warm the corn tortillas for about 30 seconds on each side until they are pliable. Alternatively, you can wrap them in foil and warm them in the oven.

Assemble the Tacos: Place a generous portion of cooked shrimp on each tortilla. Top with shredded cabbage, diced tomatoes, chopped onions, and cilantro.

Add Avocado: Layer a few slices of avocado on each taco.

Finish with Lime: Squeeze fresh lime juice over the assembled tacos for a zesty kick. If you like, drizzle your favorite hot sauce, sour cream, or creamy avocado dressing over the top.

Serve and Enjoy: Serve the tacos immediately with lime wedges on the side for extra flavor.
