Ingredients

8 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional, for spice)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to the package instructions until al dente. Reserve about 1 cup of pasta water and then drain the pasta.

Cook the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, until fragrant.

Sauté Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Prepare the Sauce: In the same skillet, pour in the white wine and bring it to a simmer. Let it cook for about 2-3 minutes, allowing the alcohol to evaporate. Stir in the lemon juice and zest.

Combine Pasta and Sauce: Add the cooked linguine to the skillet, tossing it in the sauce. If the pasta seems dry, add some reserved pasta water a little at a time until you reach the desired consistency.

Finish with Shrimp: Return the shrimp to the skillet, tossing everything together until well combined. Add the remaining 2 tablespoons of butter and stir until melted.

Serve: Plate the Shrimp Scampi Linguine immediately, garnished with fresh parsley and grated Parmesan cheese. Enjoy!
