2 large russet potatoes

1 cup all-purpose flour (plus more for dusting)

1 large egg

1 teaspoon salt

1 tablespoon olive oil (optional)

1 teaspoon garlic powder (optional)

Fresh herbs for garnish (such as parsley or chives)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Potatoes: Peel the russet potatoes and cut them into rough chunks. Place them in a pot of salted water and bring to a boil. Cook them until fork-tender, about 15–20 minutes.

    Mash the Potatoes: Drain the cooked potatoes and allow them to cool slightly. Mash them in a large bowl until smooth and let cool completely.

      Make the Dough: Once the mashed potatoes are cool, add the egg, salt, and olive oil (if using) to the bowl. Gradually incorporate the flour, using your hands or a fork, until the mixture forms a soft dough. You may need to add more flour if it's too sticky.

        Knead and Roll: Lightly flour your work surface and knead the dough for about 2 minutes until smooth. Divide the dough into thirds. Roll out one portion into a thin rectangle (about 1/4 inch thick). Use a sharp knife or a pizza cutter to slice the dough into thin strips for noodles.

          Cook the Noodles: Bring a pot of salted water to a boil. Carefully drop the potato noodles into the boiling water. They will sink initially, then float to the top when they’re done cooking, which should take about 2–3 minutes for fresh noodles.

            Drain and Serve: Use a slotted spoon to remove the noodles and transfer them to a serving bowl. Drizzle with olive oil and sprinkle with garlic powder, if desired. Toss to combine and garnish with fresh herbs and grated Parmesan cheese before serving.
