4 medium-sized potatoes (preferably starchy like Russet)

1 cup all-purpose flour (plus extra for dusting)

1 large egg

1 tsp salt

1/2 tsp black pepper

1 tsp garlic powder (optional)

2 tablespoons olive oil or melted butter (for sautéing)

Fresh herbs (such as parsley or basil, for garnish)

Prepare the Potatoes: Peel the potatoes and cut them into quarters. Boil them in salted water for about 15-20 minutes, or until fork-tender.

    Mash the Potatoes: Drain the potatoes and let them cool slightly. Mash them in a large mixing bowl until smooth and free of lumps.

      Make the Dough: Add the egg, salt, pepper, and garlic powder (if using) to the mashed potatoes. Mix well. Gradually add the flour, stirring continuously until a dough begins to form. You may need to adjust the flour slightly depending on the humidity.

        Knead the Dough: On a floured surface, knead the dough gently for about 2-3 minutes until it’s smooth and pliable. If too sticky, add a little more flour.

          Shape the Noodles: Divide the dough into 4 pieces. Roll each piece into a long rope, about 1/2 inch thick. Cut the rope into 1-inch long pieces (you can also use a potato ricer for a unique noodle shape).

            Cook the Noodles: Bring a large pot of salted water to a boil. Carefully drop the potato noodles into the boiling water. Cook for about 2-3 minutes or until they float to the surface, indicating they’re done. Remove with a slotted spoon and drain.

              Sauté: In a skillet, heat olive oil or melted butter over medium heat. Add the cooked noodles and sauté for 4-5 minutes until slightly crispy and golden.
