1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup unsalted butter, softened

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup dark corn syrup

1 cup packed light brown sugar

3 large eggs

1 teaspoon vanilla extract (for filling)

1 ¾ cups chopped pecans

¼ teaspoon ground cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

    Prepare the Crust: In a large mixing bowl, combine the flour, granulated sugar, softened butter, 1 teaspoon vanilla extract, and salt. Mix until the mixture is crumbly and evenly combined. Press this mixture firmly into the bottom of the prepared baking dish to form a crust.

      Bake the Crust: Bake the crust in the preheated oven for about 15-20 minutes or until it is lightly golden. Once done, remove from the oven and let it cool slightly.

        Make the Filling: In another bowl, whisk together the dark corn syrup, brown sugar, eggs, 1 teaspoon vanilla extract, and ground cinnamon (if using) until smooth and well combined.

          Add the Pecans: Stir in the chopped pecans into the filling mixture until they are evenly distributed.

            Combine: Pour the pecan filling over the pre-baked crust, spreading it evenly.

              Bake Again: Return the dish to the oven and bake for an additional 25-30 minutes, or until the filling is set and no longer jiggly in the center.

                Cool and Slice: Allow the bars to cool in the baking dish on a wire rack. Once cooled, lift the bars out using the parchment paper if used, and slice them into squares or rectangles.
