Easy Pancake Poppers

A delightful twist on a classic dish.

Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1/2 cup mini chocolate chips (optional)

Cooking spray or oil for greasing

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or oil to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Chocolate Chips: If you're using mini chocolate chips, fold them in gently to the batter.

Fill Muffin Tin: Spoon the pancake batter into the greased mini muffin tin, filling each cup about two-thirds full.

Bake: Bake in the preheated oven for 12-15 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Let the pancake poppers cool in the tin for a few minutes, then gently remove them and serve warm with maple syrup, whipped cream, or your favorite toppings. Enjoy!
