1 lb chicken breast, cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

2 tablespoons Dijon mustard

Cooking spray or olive oil for drizzling

Fresh parsley for garnish (optional)

Prep the Chicken: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Make the Breading: In a shallow bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined.

      Prepare the Egg Mix: In another bowl, whisk together the eggs and Dijon mustard until smooth.

        Coat the Chicken: Take each piece of chicken, dip it into the egg mixture, allowing excess to drip off, then roll it in the panko mixture until fully coated. Place the coated chicken bites on the prepared baking sheet.

          Bake: Once all the chicken pieces are coated and arranged on the baking sheet, lightly spray them with cooking spray or drizzle with olive oil to help them crisp up. Bake in the preheated oven for 15-20 minutes or until golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
