Ingredients
  

12 oz spaghetti

1 tablespoon olive oil

4 cloves garlic, minced

1 medium onion, chopped

1 can (14 oz) diced tomatoes, with juice

4 cups vegetable or chicken broth

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Stir in the diced tomatoes with their juice, vegetable or chicken broth, and season with oregano, basil, red pepper flakes (if using), salt, and pepper. Bring the mixture to a boil.

      Once boiling, add the spaghetti to the pot. Push the spaghetti down into the liquid as best as you can but it’s okay if some is still above the surface.

        Reduce the heat to medium and cover the pot. Allow to simmer, stirring occasionally, until the spaghetti is cooked to al dente (about 10-12 minutes).

          When the pasta is ready, stir in the chopped spinach and let it wilt for 1-2 minutes.

            Remove from heat and mix in the grated Parmesan cheese. Stir well until the cheese melts and incorporates into the sauce.

              Serve warm, garnished with fresh basil leaves and additional Parmesan cheese if desired.
