Easy One Pot Queso Chicken and Rice

A delightful twist on a classic dish.

Ingredients
  

1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 cup long-grain rice

1 can (15 oz) diced tomatoes with green chilies (like Ro-Tel)

2 cups chicken broth

1 cup queso cheese (either pre-made or homemade)

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup diced bell pepper (any color)

Fresh cilantro (for garnish)

Lime wedges (optional)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven over medium heat, add the olive oil. Once hot, add the diced chicken. Season with salt and pepper. Cook for about 5-6 minutes, or until the chicken is browned on all sides. Remove the chicken and set it aside.

    Cook the Aromatics: In the same pot, add the diced onion and bell pepper. Sauté for 4-5 minutes until the onion becomes translucent. Add the minced garlic and stir for 1 minute until fragrant.

      Toast the Rice: Stir in the rice and cook for 1-2 minutes, allowing it to toast slightly with the aromatics.

        Add the Liquids: Pour in the diced tomatoes (with juices) and chicken broth. Add the chili powder and cumin, and stir to combine. Bring the mixture to a boil.

          Combine Ingredients: Once boiling, return the chicken to the pot along with the corn. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

            Melt the Queso: After the rice is tender, remove the pot from heat. Stir in the queso cheese until it melts completely and creates a creamy mixture. Adjust seasoning with additional salt and pepper if necessary.

              Serve: Fluff the chicken and rice with a fork. Serve hot, garnished with fresh cilantro and lime wedges for that extra zing!
