Easy One-Pan Lemon Garlic Chicken

Ingredients
  

4 boneless, skinless chicken thighs

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

1 pound baby potatoes, halved

1 cup cherry tomatoes, halved

1 cup chicken broth or white wine

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 400°F (200°C).

    Prep the chicken: In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, smoked paprika, salt, and pepper. Add the chicken thighs and toss to coat them evenly in the marinade. Let them marinate for at least 15 minutes (or up to 2 hours in the fridge for more flavor).

      Prepare the pan: In a large oven-safe skillet or baking dish, arrange the potatoes in a single layer. Drizzle with a little olive oil, and season with salt and pepper. Roast in the preheated oven for 15 minutes.

        Add chicken: Take the skillet out of the oven and nestle the marinated chicken thighs among the potatoes. Pour in the chicken broth (or white wine) around the chicken and potatoes.

          Add cherry tomatoes: Scatter the halved cherry tomatoes on top and around the chicken and potatoes.

            Bake: Return the skillet to the oven and bake for an additional 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the potatoes are tender.

              Finish and serve: Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
