1 cup rolled oats

1 ½ cups grated carrots (about 3 medium carrots)

1/2 cup unsweetened applesauce

1/3 cup honey or maple syrup

2 eggs

1 tsp vanilla extract

1/2 cup whole wheat flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/4 tsp nutmeg (optional)

1/2 cup raisins or chopped walnuts (optional)

A pinch of salt

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan or line it with parchment paper.

    Mix Wet Ingredients: In a mixing bowl, combine the rolled oats, grated carrots, applesauce, honey or maple syrup, eggs, and vanilla extract. Stir until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg (if using), and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Stir until combined, then gently fold in the raisins or walnuts if using.

          Pour and Bake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

            Cool and Serve: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve!
