Ingredients

2 cups shredded coconut (sweetened or unsweetened)

1 cup cream cheese (softened)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup graham cracker crumbs

1/4 cup almond flour (optional, for added texture)

1/4 cup dark chocolate chips (for dipping, optional)

Instructions

Prepare the Mixture: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

Add Coconut and Crumbs: Gradually fold in the shredded coconut, graham cracker crumbs, and almond flour (if using) into the cream cheese mixture. Mix until all ingredients are thoroughly combined.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes. This will make it easier to handle when forming the balls.

Form the Balls: Once chilled, scoop out about a tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining mixture to make about 15-20 balls.

Optional Chocolate Coating: If desired, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip each coconut ball into the melted chocolate, allowing any excess to drip off. Place them on a parchment-lined tray.

Set the Balls: After dipping in chocolate, return the balls to the refrigerator for about 15 minutes to allow the chocolate to harden.

Serve: Once set, enjoy your delicious no-bake coconut cream balls as a sweet treat or dessert!
