Easy Mediterranean Chicken Orzo

1 lb boneless, skinless chicken thighs

1 tablespoon olive oil

1 cup orzo pasta

2 cups low-sodium chicken broth

1 cup cherry tomatoes, halved

1 cup baby spinach

1 red bell pepper, diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Juice of 1 lemon

Feta cheese, crumbled (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large skillet over medium heat, add the olive oil. Season the chicken thighs with salt, pepper, oregano, and basil. Once the oil is hot, add the chicken thighs and cook for about 5-7 minutes per side until they are browned and cooked through. Remove from skillet and set aside.

    Cook the Orzo: In the same skillet, add garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a boil. Add the orzo pasta and reduce heat to a simmer. Cook for about 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

      Combine Ingredients: While the orzo cooks, chop the cooked chicken into bite-sized pieces. Once the orzo is ready, stir in the cherry tomatoes, spinach, diced bell pepper, chopped chicken, and the lemon juice. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes soften slightly.

        Serve: Taste and adjust seasoning with salt and pepper. Serve warm, topped with crumbled feta cheese and fresh parsley for garnish.
