1 lb (450g) boneless, skinless chicken thighs (cut into bite-sized pieces)

1 cup all-purpose flour

2 large eggs (beaten)

1 cup panko breadcrumbs

1 tsp salt

1/2 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (optional, for heat)

1/2 cup sesame seeds

Vegetable oil (for frying)

For the Sauce:

1/4 cup soy sauce

2 tbsp honey

1 tbsp rice vinegar

1 tbsp sesame oil

1 garlic clove (minced)

1 tsp fresh ginger (minced)

1-2 green onions (chopped, for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: In a large bowl, mix the salt, pepper, garlic powder, onion powder, and cayenne pepper. Add the chicken pieces and toss them in the spice mixture until evenly coated.

    Set Up Dredging Station: In one bowl, place the flour. In a second bowl, add the beaten eggs. In a third bowl, mix the panko breadcrumbs with the sesame seeds.

      Coat the Chicken: Dredge each piece of chicken in the flour first, shaking off the excess. Then dip into the beaten eggs, allowing any excess to drip off. Finally, roll the chicken in the panko-sesame mixture, ensuring it is well-coated.

        Heat Oil: In a large skillet or frying pan, pour enough vegetable oil to cover the bottom (about 1/2 inch deep). Heat over medium-high heat until shimmering.
