For the Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten

Zest of 1 lemon

For the Lemon Orzo:

1 cup orzo pasta

2 tablespoons olive oil

2 cups vegetable or chicken broth

Juice of 1 lemon

1/4 cup fresh dill, chopped

Salt and pepper to taste

Optional: cherry tomatoes and cucumber for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, feta cheese, parsley, garlic, oregano, salt, pepper, beaten egg, and lemon zest. Mix until well combined.

      Form the Meatballs: With your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

        Bake the Meatballs: Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are golden brown and cooked through.

          Meanwhile, Cook the Orzo: In a saucepan, bring the broth to a boil. Add the orzo, reduce heat, and simmer for about 8-10 minutes or until al dente. Stir occasionally.

            Add Flavors to the Orzo: Once the orzo is cooked, drain any excess liquid if necessary. Stir in the olive oil, lemon juice, dill, and season with salt and pepper to taste.

              Combine and Serve: Serve the Greek meatballs on a bed of lemon orzo. Optionally, top with halved cherry tomatoes and diced cucumber for freshness.

                Garnish: Finish with a drizzle of olive oil and a sprinkle of additional parsley or dill, if desired.
