4 large yellow onions, thinly sliced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

4 cloves garlic, minced

8 cups beef broth (or vegetable broth for a vegetarian option)

1/2 cup dry white wine (optional)

1 teaspoon dried thyme (or 2 teaspoons fresh)

Salt and pepper to taste

1 baguette, sliced into thick pieces

2 cups grated Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped (for garnish)

Instructions
 

Caramelize the Onions: In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and sprinkle with sugar. Cook, stirring frequently for about 20-25 minutes, or until the onions are deep golden brown and caramelized.

    Add Garlic and Broth: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Then, pour in the dry white wine, if using, and let it simmer for a few minutes until reduced slightly. Add the beef broth (or vegetable broth) and thyme. Season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes.

      Prepare the Bread: While the soup is simmering, preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven for about 10 minutes, or until golden and crisp.
